Parker about Domaine de Chevalier 2000
The 2000 Domaine de Chevalier has long been one of my favorite wines and now at 16 years of age, it continues to live up to expectations. It has a beautiful nose, so lively and vivacious, with black plum and blackberry, cedar and damp undergrowth scents, an undercurrent of tobacco. The palate is medium-bodied with impressive definition, a fine thread of acidity, although still backward and intimating that there is "much more in the tank." The structure is wonderful here, although it does not quite deliver the length you might expect, which compelled me to dock a couple of points. The bottom line: it's a great Pessac-Léognan with a 30-40 year lifespan. Tasted January 2016.

The nose unfolds with a tantalizing array of aromas of ripe dark fruits such as cassis, blackberries, and black cherries, accompanied by delicate notes of cedarwood, tobacco, and subtle spices.
On the palate, this wine is full-bodied and smooth, with excellent structure and silky tannins that are perfectly integrated. The fruitiness is lush and complex, accompanied by nuances of vanilla, cocoa, and a hint of smokiness that come from the careful aging in oak barrels.
The finish is long and elegant, with remarkable freshness and impressive depth, indicating this wine's potential for slow aging. The Domaine de Chevalier 2000 already offers an exceptional drinking experience, but will gain further complexity and finesse with age.
