Parker about Château Cheval Blanc 1981
I had this wine several times from the barrel, and also twice in comparative tastings prior to bottling. I never gave it more than average marks. Tasted numerous times after bottling, it is a different wine, relatively rich, spicy, plummy, with soft, silky, layered flavors, good concentration, and moderate tannin. It continues to drink well, yet it has the potential to last for 5-7 more years. Not a blockbuster in the mold of the 1982 and 1983, it is delicious and fully mature.

Château Cheval Blanc 1981

Despite the challenging conditions of the vintage, Château Cheval Blanc 1981 displays remarkable expressiveness and character. On the nose, it reveals subtle aromas of red fruits such as cranberries and red currants, accompanied by delicate floral notes and a hint of spice.
On the palate, the wine presents a structured and balanced texture. The fruit flavors are supported by finely integrated tannins and a refreshing acidity that lends the wine a certain vibrancy. Although it lacks the opulent richness or depth of an outstanding vintage, Château Cheval Blanc 1981 impresses with its elegance and finesse.
The finish is medium-length and displays a pleasant freshness that refreshes and invites the palate. Although not one of Château Cheval Blanc's legendary vintages, this wine still offers appealing drinking pleasure and is an interesting insight into the versatility of this renowned winery.
